French Toast Casserole

French toast casserole

I love French toast, but this version is an easier way to give you the same flavors.  You can make it the night before, then take it out and let it sit for a few minutes to take the chill off and then pop it into the oven.  Go get dressed for the day and by the time you are ready, you have breakfast.  I use my challah or brioche bread, it just makes a richer, tastier dish.

1/2 stick butter, melted

3/4 cup brown sugar

1 loaf challah or brioche bread (homemade is better), sliced about 1 1/2 inches thick

8 large eggs, lightly beaten

1/2 cup milk

1/2 cup cream

1 tablespoon vanilla

1/2 tsp. cinnamon

1/4 tsp. ginger

pinch of salt

1/2 cup chopped pecans

Combine the butter and brown sugar in a baking dish.  Arrange the bread slices in the dish.  Whisk together the eggs, milk, cream, vanilla, cinnamon, ginger, and salt in a bowl.  Pour over the bread, letting it soak in.  Top with pecans.  Cover with plastic wrap and refrigerate overnight.  In the morning, preheat your oven to 350 degrees.  Take the casserole out of the refrigerator and let sit on the counter for about 20 minutes to take the chill off.  Bake until browned and set.  This takes about 30-45 minutes.  Remove to rack and allow to cool slightly.  Sift powdered sugar over the top and serve with warm maple syrup.  This makes about 8 good-sized servings.
